What kind of options are there for finishing cast iron or aluminum? Do they have high temp spray paints for exhaust manifolds or heads?

VHT hi temp paint is the best spray can. They make a product called nu-cast thats rated at 815ºC and is called a "Manifold Coating". nu-cast gives a natural cast iron finish. I've tried VHT chevy orange and flat black and both resulted in great finishes.
